Am cunoscut un bucatar intr-un restaurant italian si eram foarte hotarat sa incep calea asta, iar acum ca aveam posibilitatea si practic, era perfect.&nbsp;<\/p>\n\n\n\n<p>Am lucrat 8 luni fara nici o plata, doar practica si teorie, 7-8 h pe zi, ca eram si la scoala. Apoi imediat dupa terminarea liceului am plecat la Moscova (stiu ca suna ciudat, dar nu cunosteam pe nimeni, decat o fata si nici o boaba de limba, am vrut eu sa vad cum e). Am ramas aproape 2 ani pe acolo, cu mici calatorii inapoi spre tara.&nbsp;<\/p>\n\n\n\n<p>Am lucrat cateva luni la un restaurant italian, la negru, ca nu aveam acte, apoi la Hilton Moscow Leningradskaya, dupa ce am obtinut actele. Acolo am avut pentru prima data experienta sa cunosc bucatari cu experienta internationala. Am avut bucatar chef suedez: Alexander Litzell (a fost si este unul dintre cei mai buni chefi din Suedia), fost la vremea aceea in anumite proiecte in Rusia, facand parte si din echipa nationala a Suediei.<\/p>\n\n\n\n<p>Am colaborat si cu multi bucatari locali Yaroslav Nedumov, Andrey Volkov, care acum sunt foarte mari coordonatori de hoteluri din Rusia. Parasind Rusia, am ajuns in Germania, unde am lucrat intr-o brutarie foarte veche, pentru o cunostinta din familie. Munceam de noapte, dar am invatat sa fac paine de calitate. Apoi am gasit un loc pentru un sezon la un restaurant in Ghidul Michelin, in muntii Padurea Neagra, unde a fost si prima mea experienta cu Ghidul.<\/p>\n\n\n\n<p>Parasind Germania, am plecat in Romania, cu gandul ca putem dezvolta ceva in gastronomie. Am lucrat intr-un restaurant in Timisoara, total dezamagit de sistem si de patron, multe blocaje din punct de vedere al colaborarii, multa negativitate, multa mancare proasta si oameni care nu au vrut sa incerce o experienta noua.<\/p>\n\n\n\n<p>Am parasit din nou tara, am ajuns in Islanda, unde am reusit sa fac parte din echipa care a deschis un restaurant al lui Jamie Oliver ( Jamie\u2019s Italian).<\/p>\n\n\n\n<p>Era in floare, a avut cele mai multe serviri intr-o zi, dintre toate restaurantele Islandei (850 de portii a la carte). Acolo am lucrat pentru Johaness Johannesson, un pionier din echipa nationala a Islandei, cu care am colaborat pentru servirea invitatilor la competitia nationala a bucatarilor islandezi din 2018.<\/p>\n\n\n\n<p>Parasind Islanda, am ajuns in Norvegia, unde am inceput intr-un restaurant din Ghidul Michelin, Grand Cafe, pe pozitia de Chef de Partie.<\/p>\n\n\n\n<p>Restaurantul face parte din acelasi lant de restaurante precum Maaemo. Am lucrat pentru Roar Sandvik, un chef foarte cunoscut in Norvegia, de asemenea pionier in bucataria franco-scandinava si cunoscut in mass-media, dar si cu alti chefi foarte cunoscuti care au continuat proiecte in afara restaurantului.<\/p>\n\n\n\n<p>Am petrecut ultimii 5 ani aici, unde m-am conectat cu diferite tehnici de pregatire, de la moleculara la clasica, de la scandinava la japoneza.<\/p>\n\n\n\n<p><strong>La ce nivel e\u0219ti acum? \u00cen ce te-ai specializat.<\/strong><\/p>\n\n\n\n<p>Sunt specializat in risipa alimentara, in majoritatea timpului cu asta m-am ocupat. Particip destul de regulat la evenimente de genul si discut cu persoane importante din Oslo care gestioneaza risipa intr-un mod sustenabil.<\/p>\n\n\n\n<p>Cat despre bucatarie, am fost si sous-chef, chef de partie, garde manger, entremettier sau cu alti termeni, am facut de toate. M-am specializat si in tehnica japoneza de gatit cu Koji, in cea moderna de centrifugare, dar cel mai mult ma intereseaza partea de risipa alimentara. Este primul factor, in categoria celor mai importanti factori intr-o bucatarie.<\/p>\n\n\n\n<p><strong>Cum se avanseaz\u0103 \u00een buc\u0103t\u0103rie, cam c\u00e2t timp \u00ee\u021bi ia ca s\u0103 treci de la un nivel la altul?<\/strong><\/p>\n\n\n\n<p>Sunt 2 variante&nbsp; :<\/p>\n\n\n\n<p>1. Scoala, cursuri renumite, educatie (unde ai deja perfectionare inclusa, doar trebuie experienta, dar se va dobandi dupa ce vei primi pozitia).<\/p>\n\n\n\n<p>2. Faci ca mine. Pleci oriunde, iesi din confort, cunosti chefi noi, lucrezi langa ei, cu ei, pentru ei, ,,furi\u2019\u2019 ideologia, ideea, o rescrii, o scrii, o tii la fel, o aplici pana o inveti si toate astea cu singura conditie ca oamenii pentru care faci astfel de servicii sa fie calitativi.<\/p>\n\n\n\n<p>In ambele variante, cresti in pozitie, intr-o bucatarie. Ce nu o s\u0103 \u00eenve\u021bi niciodat\u0103 la \u0219coal\u0103\/cursuri. La ce te ajut\u0103 \u0219coala?<\/strong><\/p>\n\n\n\n<p>&nbsp;Scoala te ajuta sa gasesti un loc de munca stabil si sigur si o cunostinta vasta despre subiect, inainte sa te pui in pozitia de raspundere intr-un restaurant (vorbim de scoli din afara Romaniei).&nbsp; Intr-o scoala faci practica, pentru ca orice scoala colaboreaza cu cel putin un restaurant sau cu chefi din restaurante care au cunostinte si timp necesar sa iti ofere experienta in schimbul unei sume de bani. (Este necesara si sfatuiesc pe oricine sa inceapa o astfel de investitie, daca are posibilitatea).<\/p>\n\n\n\n<p>Cat despre ce nu o sa inveti intr-o scoala, este partea psihologica, constructiva, comunicativa la nivel de stres, in diferite ipostaze, conjuncturi si constrangeri.&nbsp; Nu te pregateste pentru experienta culinara adevarata din culturi diferite, cat nici despre metodologia de punere in practica, care se schimba cu foarte multa rapiditate in fiecare perioada. (Trend Culinar, Metode Culinare, etc.)<\/p>\n\n\n\n<p>Deci practica bate teoria, din punctul meu de vedere. Ce ar trebui s\u0103 schimb\u0103m<\/strong>?<\/p>\n\n\n\n<p>Dupa experienta COVID, care a facut o mare ,, prapastie\u2019\u2019 in mijlocul HoReCa din Romania si nu numai, cred ca multa lume s-a detasat de locuri de confort sau de domeniu in sine.<\/p>\n\n\n\n<p>Ce vad eu ca ar schimba situatia, este colaborarea dintre bucatari. Scoaterea ego-ului din ecuatie si mai multe proiecte intre bucatari. Am vazut cred ca 2-3 proiecte intr-un an de zile, dupa care nimic.&nbsp; In Islanda,&nbsp; este un hub de bucatari care calatoresc impreuna in diferite tari si gatesc cu alti bucatari si isi impartasesc experientele. Chiar mai mult, au renuntat la ego-ul de Chefi si de Echipe Nationale tocmai pentru a elimina mentalitatea de competitie!&nbsp;<\/p>\n\n\n\n<p><strong>Te-ai \u00eentors\/te \u00eentorci \u00een Rom\u00e2nia sau nu&#8230; de ce?<\/strong><\/p>\n\n\n\n<p>M-am intors de 2 ori, si am plecat tot de 2 ori si am ramas plecat pentru ca salariile sunt mici, costurile sunt mari. Patronii nu respecta contractul, drepturile angajatului, timpii de lucru, salariile la timp, iar ca sa faci un business acum, este cea mai proasta decizie, din punctul meu de vedere.<\/p>\n\n\n\n<p>Ar ramane situatia de colaborare cu diferiti bucatari, dar ramane de vazut, momentan nu am gasit, eu locuind in Timisoara.<\/p>\n\n\n\n<p><strong>Ce \u0219tiau colegii t\u0103i din str\u0103in\u0103tate despre Rom\u00e2nia. Ce \u0219tiau despre rom\u00e2ni? Ce \u0219tiau despre gastronomia rom\u00e2neasc\u0103?<\/strong><\/p>\n\n\n\n<p>Sa iti spun sincer, multi nu au ajuns pe la noi. Toti au fost buni si sunt buni pentru ei, dar viciul te rupe in doua in meseria asta.<\/p>\n\n\n\n<p>Temperamentul foarte prost la unii dintre ei, dar pe de alta parte, se complementa cu informatia dobandita.<\/p>\n\n\n\n<p><strong>\u021ai-ai dep\u0103\u0219it profesorii?<\/strong><\/p>\n\n\n\n<p>Da, la creativitate si viteza de punere in practica. Tocmai de asta m-au si ales cu usurinta sa fiu alaturi de ei. Dar meniul (ceva mai detaliat).<\/strong><\/p>\n\n\n\n<p>Mic, 10 mese, ambient foarte placut, stilul traditional romanesc din Banatul de campie.&nbsp; Ingrediente locale, vinuri locale si respectate cele 4 anotimpuri.<\/p>\n\n\n\n<p>Meniul facut pentru 4 anotimpuri \u2013 de la animale pana la legume si ierburi. In fiecare anotimp schimbat si ambientul.<\/p>\n\n\n\n<p>Deci de la inceput, restaurantul trebuie sa contina metoda usoara de tranzitare in constructia in sine.
