L-am \u00eentrebat pe Marian Timofti despre rolul unei astfel de institu\u021bii \u00een peisajul culinar autohton, despre utilitatea cursurilor de degust\u0103tori autoriza\u021bi de mezeluri, br\u00e2nzeturi, uleiuri de m\u0103sline \u0219.a.m.d. <\/strong><\/p>\n\n\n\n<p>Eu am \u00eenceput o colaborare pe termen lung cu FNDA. \u00cen prim\u0103 faz\u0103 am organizat \u00eempreun\u0103 cu Marian Timofti \u0219i Dana Pop degust\u0103rile de parizer de la <a href=\"https:\/\/www.facebook.com\/CorksCozyBar\" target=\"_blank\" rel=\"noreferrer noopener\">Corks<\/a>, primele dintr-o serie cu diferite produse etalon, urmeaz\u0103 s\u0103 organiz\u0103m Campionatul Na\u021bional de Zacusc\u0103 \u0219i mai vedem. Am devenit membru FNDA dup\u0103 ce am absolvit cursul de eurosomelieri, dar e mai mult dec\u00e2t probabil s\u0103 fim colegi de grup\u0103 pentru restul cursurilor dac\u0103 v\u0103 \u00eenscrie\u021bi. <\/p>\n\n\n\n<p><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"682\" height=\"1024\" src=\"https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-682x1024.webp\" alt=\"Degustare de parizer, la Corks. foto C\u0103lin Stan \" class=\"wp-image-1127\" srcset=\"https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-682x1024.webp 682w, https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-200x300.webp 200w, https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-768x1152.webp 768w, https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-1024x1536.webp 1024w, https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-8x12.webp 8w, https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-600x900.webp 600w, https:\/\/cosmindragomir.ro\/wp-content\/uploads\/2023\/08\/CS-10-jpg.webp 1333w\" sizes=\"auto, (max-width: 682px) 100vw, 682px\" \/><\/figure>\n<\/div>\n\n\n<p><strong><em>Ce \u00eenseamn\u0103 degust\u0103tor autorizat? \u00cen ce se pot ob\u021bine calific\u0103ri, ce faci cu ele dup\u0103?<\/em><\/strong><\/p>\n\n\n\n<p>Ca orice profesie \u0219i cea de degust\u0103tor este certificat\u0103 de o diplom\u0103, eliberat\u0103 de c\u0103tre anumite organe competente, prin care s\u0103 \u021bi se certifice st\u0103p\u00e2nirea senza\u021biilor gustative, vocabularul, memoria \u0219i desigur \u201cbiblioteca cu denumiri\u201d pentru descrierea acelor senza\u021bii.<\/p>\n\n\n\n<p>FNDA (<a href=\"http:\/\/www.fnda.ro\">www.fnda.ro<\/a>) a adus pentru prima oar\u0103 \u00een Rom\u00e2nia, \u0219coli acreditate \u0219i recunoscute interna\u021bional, care s\u0103 instruiasc\u0103 viitorii degust\u0103tori, noi av\u00e2nd la dispozi\u021bie doar asocia\u021bia ADAR care se ocup\u0103 doar de vin. Am dorit s\u0103 multiplic\u0103m gama produselor alimentare de consum uzual, colabor\u00e2nd cu diferite asocia\u021bii de profil asem\u0103n\u0103toare ADAR-ului care au \u00een componen\u021ba colectivului de formare profesori universitari, doctori \u00een chimie alimentar\u0103, degust\u0103tori consacra\u021bi etc. To\u021bi profesioni\u0219ti consacra\u021bi.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong><em>Ajut\u0103 aceste cursuri \u0219i pe cei care au doar interes personal, curiozitate sau sunt doar pentru profesinisti. Ce avantaje sunt si pentru unii si pentru altii.<\/em><\/strong><\/p>\n\n\n\n<p>Cel mai mare beneficiu cred c\u0103 este pentru amatori, pentru consumatorul normal deoarece ajut\u0103 la a face selec\u021bii calitative direct pe rafturile magazinelor sau la tarabele din pia\u021b\u0103. \u00cenve\u021bi s\u0103 cite\u0219ti o etichet\u0103, iei cuno\u0219tin\u021b\u0103 despre ingredientele utilizate, cuno\u0219ti modul de preparare al produsului pe care dore\u0219ti s\u0103-l achizi\u021bionezi \u0219i doar din aspectul vizual \u00eencepi s\u0103-\u021bi dai seama de corectitudinea procesului de fabricare \u0219i&nbsp; deci de calitatea produsului. Ne-am dorit s\u0103 dep\u0103\u0219im aceast\u0103 limit\u0103, uman\u0103 de altfel, printr-o trecere la nivelul superior \u0219i anume analizele senzoriale. Printr-o analiz\u0103 senzorial\u0103 corect\u0103 se poate stabili profilul senzorial al unui produs care are un DOC, DOP sau alt\u0103 recunoa\u0219tere european\u0103, produs care, analizat dup\u0103 o perioad\u0103 de timp, dintr-o produc\u021bie nou\u0103, ar trebui s\u0103 aibe acela\u0219i profil senzorial, adic\u0103 acela\u0219i parfum \u0219i gust, acelea\u0219i arome, intensitate \u0219i persisten\u021b\u0103. Telemeaua de Ib\u0103ne\u0219ti de exemplu, este o telemea care trebuie produs\u0103 doar cu laptele ob\u021binut de la vacile care au consumat iarba dintr-o zon\u0103 delimitat\u0103. Dac\u0103 tu aduci lapte din alte regiuni, de la animale care au consumat alt tip de iarb\u0103 cu un amestec de alte plante, se va ob\u021bine o telemea cu un gust diferit, sau cu perfumuri diferite, cu arome, intesit\u0103\u021bi \u0219i persiten\u021be diferite. Acest lucru este interzis \u00een UE.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong><em>A\u021bi lansat la Ia\u0219i, de cur\u00e2nd, un \u2013 ceea ce numesc eu un intreg concept \u0219i un exemplu de bun\u0103 practic\u0103 in domeniului brandingului gastronomic regional \u2013 vinul Golia. Care e povestea.<\/em><\/strong><\/p>\n\n\n\n<p>\u00cen prim\u0103vara anului 2022 la festivalul de vin \u0219i gastronomie VIN LA CULTUR\u0102 (<a href=\"http:\/\/www.vinlacultur\u0103.com\">www.vinlacultur\u0103.com<\/a>) din Ia\u0219i, am degustat \u00eempreun\u0103 cu mai mul\u021bi prieteni, printre care \u0219i Cezar Ioan (<a href=\"http:\/\/www.vinul.ro\">www.vinul.ro<\/a>)&nbsp; un vin realizat dintr-un soi nou denumit GOLIA, o \u00eencruci\u0219are controlat\u0103 \u00eentre Sauvignon Blanc \u0219i \u0218arba, la SCDVV-IA\u0218I.<\/p>\n\n\n\n<p>A pl\u0103cut la toat\u0103 lumea, probabil \u0219i pentru noutatea oferit\u0103 \u0219i atunci Cezar mi-a spus: de ce nu face\u021bi ceva pentru a promova acest vin, acest soi? Poate chiar s\u0103 proclama\u021bi o zi na\u021bional\u0103 a acestuia \u0219i a crea o s\u0103rb\u0103toare local\u0103 a soiului? Deci ini\u021biatorul, sf\u0103tuirtorul \u00een aceast\u0103 direc\u021bie a fost Vinul.ro prin Cezar Ioan.<\/p>\n\n\n\n<p>Desgur c\u0103, am trecut la organizarea acestui eveniment \u0219i un an mai t\u00e2rziu, \u00een cadrul conferin\u021bei de pres\u0103 dinaintea aceluia\u0219i festival, dar \u00een 2023, am proclamat aceast\u0103 zi a soiului GOLIA. Sunt dou\u0103 tipuri de cafea diferite.<\/p>\n\n\n\n<p>Pentru Espresso exist\u0103 un Institut Na\u021bional de Espresso Italian (<a href=\"http:\/\/www.espressoitaliano.org\">http:\/\/www.espressoitaliano.org<\/a>) are o metod\u0103 de preparare special\u0103, mie mi-a pl\u0103cut de c\u00e2nd tr\u0103iam acolo dar m-am ini\u021biat \u00een Espresso prin colegu Vasile Ghimpu care f\u0103cuse cursurile acolo. Ca pre\u0219edinte FNDA am luat leg\u0103tura cu IIAC (<a href=\"http:\/\/www.assaggiatoricaffe.org\">www.assaggiatoricaffe.org<\/a>) \u0219i am adus cei mai mari speciali\u0219ti \u00een espresso italiano \u00een Rom\u00e2nia unde s-au intruit c\u00e2teva persoane amatoare de acest tip de cafea, dar \u0219i pentru prepararea acestei b\u0103uturi dup\u0103 toate regulile lor. To\u021bi cei care doresc s\u0103 afle mai multe, pe site-ul nostru g\u0103sesc toate informa\u021biile \u0219i ne pot contacta pentru organizarea unui nou curs cu aceia\u0219i speciali\u0219ti italieni care sunt \u0219i docen\u021bi de analize senzoriale.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong><em>Sfaturi pentru consumatorii de ulei de m\u0103sline de la cel care organizeaz\u0103 cursuri de degust\u0103tori de ulei de m\u0103sline.<\/em><\/strong><\/p>\n\n\n\n<p>Acest \u201cmedicament\u201d, oferit de \u00eens\u0103\u0219i Mama Natur\u0103, merit\u0103 s\u0103 fie consumat atunci c\u00e2nd \u00ee\u0219i exprim\u0103 cel mai bine calit\u0103\u021bile, adic\u0103 proasp\u0103t, s\u0103 fie utilizat \u00een buc\u0103t\u0103rie, la g\u0103tit, deoarece are un punct de ardere foarte ridicat, dac\u0103 nu chiar cel mai ridicat dintre toate uleiurile naturale. Avem uleiuri multe importate, dar cu siguran\u021b\u0103 c\u0103 un importator prive\u0219te mai \u00eent\u00e2i la afacere \u0219i apoi la beneficiile pe\u00a0 care produsul importat le aduce. Nu c\u0103 ar fi imposibil dar este greu de exemplificat. Voi \u00eencerca s\u0103 expun doar c\u00e2teva criterii vizuale la \u00eendem\u00e2na oricui:<\/p>\n\n\n\n<p>Culoarea c\u0103rnii macre din salam, uniformitatea acelei culori, culoarea gr\u0103simii, fisuri \u00een carne, g\u0103uri (care pot fi de fermentare), m\u0103rimea toc\u0103turii, cantitatea de gr\u0103sime \u0219i distribu\u021bia acesteia \u0219i compactarea, care \u021bin de perioada de tumblerizare (amestecare \u00een tumbler),\u00a0 prezen\u021ba de tendoane sau alte p\u0103r\u021bi nedorite \u00eentr-un salam.<\/p>\n\n\n\n<p>Am subliniat partea cu gr\u0103simea deoarece la salamuri nu se pune gr\u0103simea de porc, de la mijlocul coatelor \u00een jos, deoarece este considerat\u0103 nociv\u0103. Este acel seu care se tope\u0219te pentru alte produse. Gr\u0103simea corect\u0103 este cea de pe spate, o gr\u0103sime dur\u0103, care se taie cubule\u021be \u0219i se amestec\u0103 cu carnea tocat\u0103. La multe salamuri autohtone gr\u0103simea de pe burt\u0103, seul, este topit \u0219i amestecat cu carnea m\u0103cinat\u0103 \u00een tambler, motiv pentru care nu ne mai d\u0103m seama de culoare. Toat\u0103 stima pentru br\u00e2nzeturile de Sibiu, dar nu are acea zon\u0103 at\u00e2ta br\u00e2nz\u0103 c\u00e2t s\u0103 hr\u0103neasc\u0103 toat\u0103 \u021bara, doarece nu exist\u0103 pia\u021b\u0103 \u00een \u021bar\u0103 s\u0103 nu aibe \u0219i o tarab\u0103 cu sibieni&#8230;.<\/p>\n\n\n\n<p>Este un motiv \u00een plus s\u0103 fim aten\u021bi \u00een alegerea br\u00e2nzeturilor, acolo unde colega noastr\u0103 Dr. Ing. \u00cen Chimie Alimentar\u0103, Dana Pop este cea mai \u00een m\u0103sur\u0103 s\u0103 de c\u00e2teva explica\u021bii.
